Cookie Dough Protein Truffles
Introduction
I have a fun new recipe for you to try today. It's a bit snacky, a bit dessert-y, and a lot delicious. It's a Cookie Dough Protein Truffles, made with my favorite evo hemp Cookie Dough Hemp Bars and dark chocolate for a sweet bite packed with protein. You're going to love them for a quick pick me up that's packed with protein and energy and gift-wrapped in chocolate! I also love this recipe because it's SO simple, but you might not think of it unless you saw the recipe.
When I first tried evo hemp Cookie Dough Hemp Bars they tasted like a decadent dessert to me. I was immediately obsessed with their "fudgey" texture and cookie dough flavor. These hemp bars are made with quality ingredients including hemp seeds, cashew butter, and chocolate chips. They have 12 grams of plant-based hemp protein to support your active lifestyle.
I loved taking these bars with me on my recent trip to Germany, and I always have them in my purse and gym bag as a quick snack. Hemp protein is super easy to digest, making these vegan and gluten-free bars ideal for anyone with food sensitivities.
Ingredients
- evo hemp Cookie Dough Hemp Bars
- virgin coconut oil
- vegan dark chocolate chips (or our evo hemp Chocolate Chips)
- evo hemp Hearts (optional for garnish)
Instructions
1. Prepare Your Workspace
- Line a sheet pan with parchment paper and set it aside.
2. Melt the Coconut Oi
- In a small saucepan, melt the virgin coconut oil over medium-low heat.
3. Blend the Bars
- Break the Evo Hemp Cookie Dough Hemp Bars into pieces and add them to a high-speed blender or food processor.
- Pour the melted coconut oil over the bars.
- Pulse until the mixture forms a rough ball, being careful not to over-blend to preserve the chocolate chips in the bars.
- The dough should stick together when pressed with your fingers. If it’s too crumbly, add a tiny bit more melted coconut oil.
4. Form the Dough Balls
- Using a cookie scoop, scoop out portions of the dough and roll them into balls with your hands.
5. Melt the Chocolate
- In a separate saucepan, melt the vegan dark chocolate chips over medium heat until fully melted.
- Transfer the melted chocolate to a small bowl.
6. Coat the Dough Balls
- Dip each cookie dough ball into the melted chocolate until completely coated. Use a toothpick or two forks to allow excess chocolate to drain off better.
- Place the coated balls on the parchment-lined sheet pan.
- Repeat this process until all the dough balls are coated in chocolate.
7. Optional Garnish
- If desired, sprinkle the truffles with Evo Hemp Hearts for added protein and a decorative touch.
8. Harden the Truffles
- Transfer the sheet pan to the freezer or refrigerator and allow the truffles to harden for 10-30 minutes.
9. Storage
- Store the cookie dough truffles in an airtight container in the refrigerator for up to 2 weeks. For long-term storage, freeze them.
