Tips and Tricks

1. Uniform Slicing:

To ensure even cooking, slice the cauliflower into steaks that are about 1-1.5 inches thick. This helps them cook uniformly and hold together better.

2. Steaming Cauliflower:

Steam the cauliflower until just tender, not mushy. Over-steaming can cause the steaks to fall apart. Check tenderness by inserting a fork; it should go in easily but the cauliflower should still hold its shape.

3. Pesto Variations:

You can customize the pesto by using different greens such as spinach, kale, or basil. Add a clove of garlic or a handful of nuts (like pine nuts or almonds) for more traditional pesto flavor.

  • Use soy sauce, sesame oil, and ginger in the cauliflower puree and top with a drizzle of sriracha or hoisin sauce.

Spicy Cauliflower Steaks

  • Sprinkle the cauliflower steaks with chili flakes or cayenne pepper before steaming for an extra kick of heat.

Mediterranean Style

  • Add sun-dried tomatoes and olives to the pesto and top the cauliflower steaks with crumbled feta cheese.
